Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White cabbage
Forms the bulk of the pickle and keeps a firm, crisp texture through brining.
Vinegar
Acidifies the cabbage, preserving it and giving the pickle its sharp flavour.
Sugar
Balances the sharpness of the vinegar with sweetness.
Coarse sea salt
Draws water out of the cabbage, softening it and concentrating its flavour before pickling.
White mustard seed
Adds a sharp, pungent flavour that mellows during the long resting period.

The step that matters

Shaking off the salt before pickling. Salt draws moisture out of the cabbage. Leftover salt clinging to the cabbage can make the pickle overly salty, so the surface should be shaken clean before the vinegar is added.
