Directions

Prepare the kidney

  4. Cover and stew until perfectly tender.

  5. Remove the kidney from the saucepan.

  6. Cut the kidney into small pieces.

Make the gravy and serve

  1. Season the pieces with pepper and more salt if needed.

  2. Return the pieces to the saucepan.

  3. Stew until about 2 tablespoons of gravy remain.

  4. Add a piece of butter and a little flour.

  5. Let it boil once before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef kidney
Is the main meat, becoming tender through slow, moist stewing.
Butter
Adds richness and fat to the finished gravy.
Flour
Thickens the cooking liquid into a gravy as it heats.

The step that matters

Stew until perfectly tender. Kidney is tough if underdone and becomes firm or rubbery if overcooked. Slow, covered stewing in a little liquid breaks down connective tissue gently, so the cook should check for tenderness before moving on.
