Plain Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the veal into pieces and season with pepper and coarse sea salt.

  2. Stew the veal in enough water to cover it until nearly done.

  3. Make a rich gravy by mixing butter and flour, then adding it to the stewing water.

  4. Line the sides of a deep pie dish with pie crust.

  5. Place the meat in the dish and pour the gravy over it.

  6. Roll out another sheet of pie crust to cover the top.

  7. Cut a three-inch opening in the center of the top crust and another to cross it.

  8. Turn back the four corners and decorate with twisted strips of crust.

  9. Bake in the oven at 350°F (175°C) until the crust is done.
