Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks thicken the custard, while whipped whites form the light snow topping.
Milk
Provides the liquid base that the egg yolks set into a custard.
Vanilla bean or grated lemon peel
Adds aroma and flavour to the milk base.
Fine white sugar
Sweetens the custard and helps stabilise the whipped egg whites.

The step that matters

Cook until the custard thickens. Egg yolks set gradually in gentle heat; too much heat can curdle them, leaving a grainy custard. The water bath keeps the temperature gentle and even.
