Preserved Pears

Ingredients

Directions

  1. Peel the pears and cut each large pear into four pieces, removing the core.

  2. Dissolve 5 pounds of sugar with just enough water to wet it.

  3. Dissolve ¼ ounce of isinglass in warm water.

  4. Add the dissolved isinglass to the sugar mixture.

  5. Once the sugar is dissolved, make the syrup as directed for preserved peaches.

  6. Cook the pears in the syrup as you would for peaches.
