What each ingredient does

Chicken
Releases flavour and gelatin into the water, giving the broth its body and savoury taste.
Rice or pearl barley
Starch from the grain slightly thickens the broth and adds a soft texture.

The step that matters

Simmer slowly until reduced by half. A gentle simmer extracts flavour and gelatin from the chicken without clouding the broth. A hard boil emulsifies fat and fine particles into the liquid, making it cloudy and greasy.

Swap the celery

How well each one fits the dish's main ingredients (chicken, rice):

  1. Turmericfits better
  2. Garlicfits better
  3. Corianderfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, rice. Candidates are from the same food group and used in at least 100 recipes.
