What each ingredient does

Beef
Supplies the meaty flavor and body that the liquid draws out during soaking and simmering.
Cold water
Acts as the solvent that pulls flavor out of the beef to form the broth.

The step that matters

Place it over low heat and simmer for 30 minutes.. Gentle simmering extracts flavor steadily and keeps the broth clear, while a hard boil can toughen the meat and cloud the liquid.
