To Make Butter
Ingredients
Directions
Strain the milk and let it stand in a cool, well-ventilated place at about 54°F (12°C) for three days.
Skim off the cream carefully, avoiding sour milk.
Churn the cream until it turns into butter.
Wash the butter thoroughly in very cold fresh water.
Add coarse sea salt and work the butter to remove any remaining buttermilk until it is dry and solid.
Let the salted butter stand for 5 to 6 hours until the salt dissolves completely.
Work the butter again to mix the salt evenly, avoiding contact with your hands.
Shape the butter into pounds or small prints for storage.
