Oyster Pie

Ingredients

Directions

Prepare the oysters

  1. Remove oysters from their liquor, ensuring no shell pieces remain.

  2. Drain and dry the oysters between clean napkins.

  3. Pour off half the liquor into a saucepan.

Make the filling

  1. Season the liquid with salt.

  2. Stir in cream, butter, grated cracker, and cayenne pepper.

  3. Chop the hard-boiled eggs.

  4. Mix the chopped eggs with enough bread crumbs to cover the pie's top. Season the breadcrumb mixture with cayenne pepper and salt.

  5. Make a rich pastry.

Assemble and bake

  1. Line the sides of a pie dish with the pastry.

  2. Place the oysters in the dish.

  3. Pour the hot liquor over the oysters.

  4. Sprinkle the breadcrumb mixture on top.

  5. Cover with a pastry lid. Cut an opening in the center of the lid.

  6. Decorate the top with pastry flowers or leaves.

  7. Bake until the crust is golden.

  8. Remove the pie from the oven.

  9. Serve hot.

What each ingredient does

Oysters
Provide the main filling and the briny flavor of the pie.
Cream
Adds richness and moisture to the sauce that fills the pie.
Butter
Adds fat and richness to the sauce, giving it a smooth texture.
Grated cracker
Thickens the liquid so the filling holds together rather than running out.
Hard-boiled eggs
Add body and a soft, rich texture to the breadcrumb topping.
