Roast Chickens

Ingredients

Directions

Prepare the chickens

  1. Clean the chickens, wash them, and wipe them dry.

  2. Season the inside with salt and pepper.

  3. Make a dressing by mixing bread crumbs, minced onion, salt, pepper, and enough butter to hold the crumbs together.

  4. Fill the chickens with the dressing, skewer them well, and season the outside with salt and pepper.

Roast

  1. Place the chickens on a spit, dredge with flour, and baste with butter while roasting.

Make the gravy

  1. Boil the gizzards and livers in a small amount of water.

  2. Remove the liver, chop it finely, and add it back to the boiling water with a little salt.

  3. Stir in the gravy that dripped from the chickens and thicken with butter rolled in flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and moisture, and browns the skin while it bastes the chicken.
Bread crumbs
Form the dressing that fills the chickens and absorbs their juices.
Flour
Dredging helps the skin brown, and flour rolled in butter thickens the gravy.
