Tomato Mustard

Ingredients

Directions

Make the tomato base

  1. Cut tomatoes into small pieces and boil until tender.

  2. Rub the boiled tomatoes through a sieve to extract the pulp and boil until nearly dry.

Season and bottle

  1. Add cayenne pepper, black pepper, ground cloves, mustard seed, and coarse sea salt.

  2. Boil the mixture for a few moments, then let it cool.

  3. If needed, add more salt before the final boil.

  4. Bottle the mixture, pour sweet oil on top of each bottle before corking to exclude air, and cork it tightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the bulk of the sauce and supply its body and flavor once reduced.
Mustard seed
Adds sharp, pungent flavor that sits under the tomato and spice notes.
Coarse sea salt
Seasons the sauce and helps preserve it during storage.
Sweet oil
Forms a layer over the surface that helps keep air away from the mixture.

The step that matters

Boil the pulp until nearly dry. Tomato pulp holds a lot of water. Reducing it concentrates flavor and thickens the mixture, and too much remaining moisture makes the bottled product more likely to spoil.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, clove, mustard):

  1. Horseradishfits better
  2. Lettucefits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against pepper, clove, mustard. Candidates are from the same food group and used in at least 100 recipes.
