What each ingredient does

Tomatoes
Make up the bulk of the pickle and absorb flavour from the brine and vinegar.
Onions
Add mild sweetness and a sharp bite that mellows during pickling.
Vinegar
Provides the acidity that sharpens flavour and helps preserve the pickle.
Mustard seed
Adds pungent, crunchy seasoning and a sharp aromatic note.
Cloves
Contribute warm, aromatic spice flavour to the pickle.

The step that matters

Brining the tomatoes for 8 days. Salt draws water out of the tomatoes and seasons them through, so the pickle keeps its texture and does not taste watery. Pricking the skins lets the brine penetrate evenly.

Swap the clove

How well each one fits the dish's main ingredients (tomato, vinegar, onion, mustard):

  1. Garlicfits better
  2. Capersfits better
  3. Tarragonfits better
  4. Clovethe original

Fit is the average pairing score against tomato, vinegar, onion, mustard. Candidates are from the same food group and used in at least 100 recipes.
