Orange Cheese-cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Pour the milk or cream over the sponge cake to moisten it.

  3. In a bowl, cream together the butter and sugar.

  4. Whisk the eggs in a separate bowl.

  5. Mash the sponge cake very fine and mix it with the butter-sugar mixture, eggs, liquor, and spice.

  6. Line your pie plates with pastry, fill with the mixture, and bake.
