Ingredients

Directions

  1. Seed the raisins, slice the citron into very small thin pieces, wash, pick, and dry the currants.

  2. Pour hot water over the almonds, let them stand for a few minutes, then press each kernel to remove the skin.

  3. Pound the almonds in a mortar, adding a little water or milk to prevent oiliness.

  4. Mix the fruit together and dredge with flour to coat.

  5. Beat the butter and sugar together until light and smooth.

  6. Whisk the egg yolks until very thick, then stir into the butter and sugar mixture.

  7. Add the spice, wine, brandy, and pounded almonds, and beat hard for five minutes.

  8. Whisk the egg whites until dry and grained, then fold them into the batter along with the flour.
