Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef and broken bones
Release gelatin and flavor into the water during long simmering, giving the stock body.
Vegetables of your choice
Add flavor and sweetness to the broth as they cook.

The step that matters

Slowly bring to a boil over low heat, then simmer. Gentle heat keeps the stock clear and lets collagen and flavor slowly come out of the bones. A hard, rapid boil emulsifies fat into the liquid and can make the stock cloudy and greasy.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (beef, sugar, celery, carrot, spinach):

  1. Cuminfits about as well
  2. Parsleythe original
  3. Marjoramfits about as well
  4. Turmericfits less well

Fit is the average pairing score against beef, sugar, celery, carrot, spinach. Candidates are from the same food group and used in at least 100 recipes.
