Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal scrag
Provides the meat and collagen that give the broth body and savoury flavour as it simmers.
Rice
Thickens the broth slightly as its starch releases during the final boil.

The step that matters

Skim carefully while the broth heats. Foam and fat rising at the start of heating contain impurities that would cloud the broth and taste greasy, so removing them early keeps the broth clear and clean-flavoured.

Swap the mace

How well each one fits the dish's main ingredients (veal, onion, turnip, rice):

  1. Capersfits better
  2. Turmericfits better
  3. Celeryfits better
  4. Macethe original

Fit is the average pairing score against veal, onion, turnip, rice. Candidates are from the same food group and used in at least 100 recipes.
