Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shank
Long simmering breaks down connective tissue, giving the broth body and tender meat.
Browned flour
Cooked flour thickens the broth and adds a toasted, nutty flavor.
Onions
Softened onions add sweetness and aromatic depth to the broth.
Hard-boiled eggs
Egg adds richness and a soft, creamy texture to the soup.

The step that matters

Mix the browned flour with butter and add it to the pot. Flour added directly to hot liquid clumps; mixing it with butter first coats the starch granules so they disperse and thicken smoothly.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, sugar, flour, butter, egg):

  1. Capsicumfits better
  2. Chivefits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, sugar, flour, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
