Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eels
The main protein, which becomes tender and flaky as it cooks.
Egg
Acts as a binder so the bread crumbs stick to the eel pieces.
Bread crumbs
Form a crisp, browned coating when fried.
Vinegar
Adds acidity to the cooking liquid, brightening the flavor of the eels.

The step that matters

Let the mixture cool before dipping. Dipping eel pieces while the liquid is still hot can make the egg and crumb coating slide off or cook unevenly. Letting it cool and drying the pieces helps the coating adhere and fry to an even brown.
