Braised Turkey

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Truss and stuff the turkey with a forcemeat made of minced chicken, mushrooms, sweetbreads, and bread crumbs.

  2. Lard the breast with small squares of fat salt pork.

Braise

  1. Place the turkey in a stewpan, breast side up, with sliced vegetables and enough broth to cover.

  2. Set the stewpan on the stove and bring to a simmer.

  3. Once simmering, transfer to a 300°F (150°C) oven and cook slowly for 1.5 hours.

  4. Baste occasionally with the gravy.

Finish and serve

  1. Garnish the turkey with stoned olives and thicken the gravy before serving.

What each ingredient does

Turkey
Forms the main body of the dish, cooking slowly until tender in the braising liquid.
Minced chicken
Forms a forcemeat that adds body and a soft, moist texture to the stuffing.
Sweetbreads
Adds richness and a tender, creamy texture to the forcemeat.
Bread crumbs
Bind the forcemeat and absorb juices, helping it hold together while cooking.
Fat salt pork
Melts during slow cooking, basting the breast and adding fat for moisture and flavour.
Broth
Provides the braising liquid that keeps the turkey moist and builds the gravy.

The step that matters

Slow cooking at a low oven temperature. Cooking slowly at a gentle heat lets the connective tissue soften and the meat stay moist. Higher heat or a boil would toughen the muscle fibres and dry the breast.

  3. Potatofits better
  4. Carrotthe original
