Reed Birds

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pluck and draw the reed birds carefully.

  2. Salt the birds and dredge them in flour.

  3. Preheat the oven to 400°F (200°C).

  4. Place raw oysters inside each bird before roasting.

  5. Roll the oysters in bread crumbs.

  6. Rub butter over the birds and season with pepper.

  7. Roast in the oven for about 15 minutes.
