Quails on Toast

Ingredients

Directions

  1. Wipe the quails well and do not remove the legs.

  2. String the quails tightly to raise the breasts.

  3. Place a little butter and lemon juice on each quail.

  4. Insert a quarter of lemon inside each quail.

  5. Wrap each quail with a slice of pork and make two or three cuts in the pork.

  6. String the pork tightly around each quail.

  7. Cook the quails over a good fire until nearly done.

  8. Cut the string and dress the quails nicely on toast.

  9. Serve hot, pouring off excess fat and adding lemon slices around the dish.
