What each ingredient does

Pigeons
Provide the main protein, cooked whole so the stuffing heats through inside.
Bread crumbs
Absorb butter and juices in the stuffing, giving it a soft, moist texture.
Fresh butter
Adds richness and fat, carrying flavour and helping the stuffing stay moist.
Bacon slices
Lay over the breast to baste the lean meat with fat as it roasts.
Onion
Adds savoury depth and aroma to the stuffing as it cooks.

The step that matters

Roast the pigeons until cooked through. Pigeon is a small, lean bird, so overcooking dries the breast while the stuffing needs enough heat to cook fully. Judge doneness by the juices and the stuffing's temperature rather than by time alone.

Swap the onion

How well each one fits the dish's main ingredients (bread, butter, parsley, pepper, nutmeg):

  1. Shallotfits better
  2. Carrotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against bread, butter, parsley, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
