Ingredients

Directions

The book says “a rather hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the loaf

  1. Combine ground veal, chopped salt pork, cracker crumbs, 2 beaten eggs, and 1 cup of stock in a large bowl.

  2. Mix the mixture well with your hands.

  3. Form the mixture into a loaf shape.

Assemble and bake

  1. Butter a flat cake tin.

  2. Place the loaf in the tin.

  3. Beat the third egg.

  4. Spread the beaten egg over the loaf.

  5. Sprinkle dried bread crumbs over the loaf.

  6. Bake at 400°F (200°C) for 3 hours.

  7. Baste frequently with the remaining stock mixed with melted butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf, giving it its meaty bulk and structure.
Salt pork
Adds fat that keeps the lean veal moist and adds savory flavor during baking.
Cracker crumbs
Absorb liquid and help bind the meat so the loaf holds its shape when sliced.
Eggs
Bind the mixture together and set during baking, helping the loaf hold its shape.
Stock
Adds moisture to the mixture and, with basting, keeps the surface from drying out.

The step that matters

Baste frequently with the remaining stock mixed with melted butter.. Lean veal dries out over a long bake. Regular basting adds moisture and fat to the surface, keeping the loaf juicy and helping the top brown.

Swap the thyme
