  1. Slice the tenderloins crosswise and flatten them.

  2. Fry or broil the tenderloins, seasoning with salt and pepper.

  3. Once cooked, remove the tenderloins to a platter.

  4. To make gravy, dredge a little flour into the hot fat.

  5. If needed, add a little butter and stir until browned.

  6. Add a little milk or cream, stir until it boils, and pour over the dish.
