Kidney Toast

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the kidney mixture

  1. Chop the kidneys very fine, removing the outer skin and sinews.

  2. In a pan, combine the chopped kidneys, parsley, and shallot with butter and fry until cooked.

  3. Add Worcestershire sauce, sprinkle in flour, and boil for three minutes.

  4. Season with salt and pepper.

Assemble and bake

  1. Butter the slices of toast and cover them with the kidney mixture.

  2. Top with a thick layer of bread crumbs mixed with grated Parmesan cheese.

  3. Place in a 400°F (200°C) oven for ten minutes until golden.

What each ingredient does

Kidneys
Provide the main meaty filling that forms the body of the topping.
Flour
Thickens the kidney mixture so it holds together on the toast rather than running.
Worcestershire sauce
Adds savoury, tangy depth that balances the richness of the kidneys.
Bread crumbs
Form a crisp, golden top layer when baked.
Parmesan cheese
Adds savoury flavour and helps the topping brown in the oven.
Butter
Adds richness and helps the toast and filling brown when fried and baked.

The step that matters

Boil the kidney mixture after adding the flour. Flour must be cooked long enough to thicken the sauce and lose its raw starchy taste. Boiling the mixture for the full three minutes helps it bind so the filling stays on the toast instead of soaking into the bread.

Swap the parsley

How well each one fits the dish's main ingredients (sauce, flour, butter, shallot, pepper, bread, parmesan cheese):

  1. Capersfits better
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Thymefits less well

Fit is the average pairing score against sauce, flour, butter, shallot, pepper, bread, parmesan cheese. Candidates are from the same food group and used in at least 100 recipes.
