Strawberry Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter and sugar together until creamy.

  3. Add the eggs and mix well.

  4. Sift together the flour and baking powder, then stir into the mixture.

  5. Pour the batter into deep tin plates, filling four plates.

  6. Bake until golden brown.

Assemble and top

  1. Mix the strawberries with 1 cup of sugar.

  2. Spread the strawberries between the layers of cake.

  3. Make a meringue by beating the egg white with powdered sugar.

  4. Spread the meringue over the top layer of strawberries.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure and richness as they set in the baking.
Flour
Forms the structure of the cake crumb as it bakes.
Baking powder
Releases gas in the batter, helping the layers rise and become light.
Butter
Adds fat and tenderness, and helps the creamed batter hold air.
Sugar
Sweetens the cake and helps the strawberries release juice when macerated.
Strawberries
Provide fruit flavour, moisture and acidity between the cake layers.

The step that matters

Beat the egg white with powdered sugar for the meringue. Egg white must be beaten until it forms stiff, stable foam; under-beaten or greasy whites will not hold peaks and the topping will weep or collapse.
