Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a smooth, creamy body to the sauce.
Sugar
Provides sweetness and, when creamed with butter, a light texture.
Egg yolk
Adds richness and helps bind the soft sauce.
Boiling water
Melts the sugar and loosens the mixture into a pourable sauce.
Egg white
Whipped, it adds lightness and a foamy texture to the vanilla sauce.
Powdered sugar
Dissolves easily, giving sweetness and a smooth texture to the vanilla sauce.

The step that matters

Fold in the whipped egg white. Whipped egg white traps air in its protein network to create foam. Folding gently keeps that air in the sauce, while vigorous stirring would deflate it and make the sauce dense.
