Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn-starch
Thickens the liquid into a smooth sauce as it heats.
Sugar
Adds sweetness and balances the lemon's acidity.
Lemon
Provides the sharp flavour and aroma of the sauce.
Butter
Adds richness and a smooth, glossy mouthfeel.

The step that matters

Stir over heat without boiling. Corn-starch must be heated enough to swell and thicken, but boiling vigorously can break down its thickening power and leave the sauce thin. Gentle, steady stirring keeps the starch smooth and lumps out.
