The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg proteins set when heated, giving the custard its firm, sliceable structure.
Cream
Adds fat and moisture, softening the set egg for a smoother, richer texture.

The step that matters

Steam the custards until firm. Egg proteins set as they heat, but too much heat makes them tight, rubbery and watery as they weep. Stop once the custard is just set so it stays smooth and sliceable.

Swap the white pepper

How well each one fits the dish's main ingredients (egg, cream):

  1. Nutmegfits better
  2. Tarragonfits about as well
  3. White pepperthe original
  4. Capersfits about as well

Fit is the average pairing score against egg, cream. Candidates are from the same food group and used in at least 100 recipes.
