Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as its starch swells and gels during cooking, giving the pudding body.
Milk
Forms the base of the pudding and provides richness and creamy moisture.
Egg whites
Beaten and folded in to add lightness and airiness to the cooled pudding.
Sugar
Adds sweetness and balances the mild flavour of the milk and tapioca.

The step that matters

Stirring the tapioca into the boiling milk. Tapioca starch can clump if added without constant stirring, and it needs to be stirred continuously as it thickens so the pudding cooks evenly and becomes smooth.
