Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk thickened with corn flour
Corn flour thickens the milk so it gives the soup a smoother, creamier body.
Stewed tomatoes
Adds acidity and tomato flavour that balances the sweetness of the root vegetables.
Butter
Adds fat and richness, rounding out the flavour of the broth.
Turnips
Contribute body and a mild, slightly peppery sweetness as they simmer.

The step that matters

Adding the thickened milk. Once milk is added, the soup should be kept hot but not allowed to boil hard, since prolonged vigorous boiling can cause dairy to separate and the thickened texture to break.

Swap the cabbage

How well each one fits the dish's main ingredients (onion, carrot, turnip, celery, tomato, butter, milk):

  1. Leekfits better
  2. Potatofits better
  3. Parsnipfits better
  4. Cabbagethe original

Fit is the average pairing score against onion, carrot, turnip, celery, tomato, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
