Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Peel and slice the tomatoes.

  3. In a buttered pie dish, layer the tomatoes and season with sugar and pepper.

  4. Strew bread crumbs over the tomatoes and scatter minced pork on top if using.

  5. Repeat the layering, finishing with bread crumbs on top.

  6. Cover the dish tightly and bake for 30 minutes, or until the juice bubbles at the sides.

  7. Remove the cover and brown the top before serving.
