Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Cut the stem end off the eggplant and peel it.
Scrape out the center and soak the pieces in weak brine for 45 minutes.
Drain and chop the scraped pieces finely.
Stuff and bake
Mix the chopped eggplant with forcemeat and add some cream.
Place the mixture into a deep baking dish with plenty of butter and a little water.
Cover the dish and bake at 350°F (175°C), basting frequently, until done.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggplant
- Forms the bulk of the filling and gives a soft, tender texture when baked.
- Forcemeat
- Binds the chopped eggplant and adds body and savoury richness to the filling.
- Cream
- Adds moisture and richness, keeping the filling soft as it bakes.
- Butter
- Adds fat and flavour and helps the surface brown during baking.
The step that matters
Covering and basting while baking. Eggplant is mostly water and can dry out or turn stringy in a hot oven. Covering the dish traps steam, and frequent basting with the butter and water keeps the filling moist until it is fully cooked through.
