Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquette and give a soft, tender interior.
Egg yolks
Bind the mixture and add richness so the cylinders hold their shape.
Bread crumbs
Form a crisp outer coating that browns during frying.
Beaten eggs
Act as a glue so the crumbs adhere to the shaped cylinders.

The step that matters

Frying in deep hot oil. If the oil is not hot enough, the coating absorbs oil and turns greasy and soggy before it browns. Deep, hot oil seals the crumbs quickly, producing a crisp, golden exterior while the interior heats through.
