Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the sauce as they heat and set, giving it body.
Sugar
Adds sweetness and balances the wine's acidity.
Butter
Adds fat for a richer flavour and smoother mouthfeel.
Wine
Adds acidity and aroma, added off heat to keep its flavour fresh.

The step that matters

Adding the beaten eggs to the boiling liquid. Egg proteins set at around 160°F, so eggs added to very hot liquid can scramble. Keep the heat moderate and stir steadily so the sauce thickens smoothly.
