Pound Cake

Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the softened butter in a large bowl.

  2. Add the powdered sugar and mix until well combined.

  3. Beat the egg yolks until light and fluffy, then stir them into the butter mixture.

  4. Gradually add flour and beat well until smooth.

  5. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the batter.

Bake

  1. Pour the batter into a greased cake pan and bake in a preheated oven at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and adds richness and a tender crumb.
Eggs
Yolks add richness and emulsify the batter; whites whipped to peaks add lift and structure.
Flour
Provides the starch and gluten that give the cake its structure once baked.
Powdered sugar
Sweetens the cake and helps create a fine, tender texture when creamed with butter.

The step that matters

Folding in the egg whites. Whipped whites are full of trapped air that gives lift. Folding gently keeps that air in; vigorous stirring deflates the batter and can leave a dense, heavy cake.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
