Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together.

  2. Separate the eggs and add the yolks to the mixture.

  3. Melt the chocolate in the boiling water and add it to the mixture.

  4. Beat well and add the vanilla.

  5. Mix in the milk and flour along with the baking powder.

  6. Lastly, fold in the beaten egg whites.

Bake and ice

  1. Bake in layers at 350°F (175°C) for 30 minutes.

  2. Ice with a white icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and adds richness and a tender crumb.
Sugar
Sweetens the cake and helps the creamed mixture hold air for a light texture.
Eggs
Yolks add richness and structure, while whipped whites lighten the batter.
Flour
Forms the cake's structure as its proteins set during baking.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Chocolate
Gives the cake its chocolate flavor and deep color.

The step that matters

Folding in the beaten egg whites. Whipped whites hold air that gives the cake its lift. Stirring too hard or too long deflates them, leaving a dense cake, so fold gently until just combined.
