Marshmallow Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix the butter, flour, sugar, baking powder, and milk in the order given.

  3. In a separate bowl, soak the gum Arabic in warm water for 1 hour.

  4. Place the soaked gum Arabic in the top part of a double boiler over boiling water.

  5. Stir constantly until the gum Arabic is dissolved, then strain through cheesecloth.

  6. Add powdered sugar to the dissolved gum Arabic and stir until dissolved.

  7. Beat the egg whites until stiff, then pour the gum Arabic mixture over them and add vanilla.

  8. Let the filling cool until light and thick before using it between the cake layers.
