Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Helps set the body and smooth texture by limiting large ice crystals as the sherbet freezes.
Sugar
Adds sweetness and keeps the sherbet softer by lowering its freezing point.
Pineapple
Supplies the main fruit flavor and natural acidity.

The step that matters

Dissolve the gelatin fully. Gelatin must be completely dissolved in the boiling water and soaked first. Undissolved granules can leave specks or rubbery bits, and uneven gelatin gives an uneven texture after freezing.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, gelatin):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Pineapplethe original

Fit is the average pairing score against sugar, gelatin. Candidates are from the same food group and used in at least 100 recipes.
