Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Provides the gel structure that lets the dessert hold its shape when chilled.
Egg white
Whipped into the mixture to give it a light, airy, foamy texture.
Sugar
Adds sweetness and helps give the boiled syrup body.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.

The step that matters

Cool until it begins to thicken before adding the egg white. If the mixture is still warm and runny, the beaten egg white will deflate and not hold its foam. If it has set too far, it will not blend smoothly into a light texture. Stopping at the point of thickening keeps the foam stable.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Pineapplethe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
