Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Binds the mixture together so the fritters hold their shape while cooking.
Cooked rice
Provides the bulk and body of the fritters.
Cheese
Adds rich flavour and helps the fritters brown and turn savoury.
Milk
Moistens the mixture so it can be spooned onto the skillet.

The step that matters

Cook until brown, then turn. The fritters need enough heat to brown and set on the first side before turning. Turning too early can leave them soft and likely to break apart.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cheese, rice, milk, egg):

  1. Asparagusfits better
  2. Potatofits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against cheese, rice, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
