Hare Soup

Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Hare Soup

Ingredients

Directions

  1. Skin and gut a fresh-killed hare, then cut it into pieces.

  2. In a stewpan, combine the beef, ham, carrot, herbs, onions, whole pepper, browned flour, roll crumbs, port wine, salt, and cayenne.

  3. Add 3 quarts of water and simmer gently for 8 hours.

  4. Strain the soup through a sieve.

  5. Remove the best pieces of hare after 3 hours and set aside.

  6. Reheat the reserved hare pieces and add them back to the soup when serving.
