Pot and press

  1. Arrange the white meat in a dish in a desired design, filling in with the dark meat.

  2. Pour enough of the cooking liquid over the meat to moisten it thoroughly.

  3. Place a small board over the mixture and press down with heavy weights.

  4. After a few hours, turn it out onto a platter to serve.

What each ingredient does

Chicken
Provides the meat that is cooked tender, chopped, and packed into the dish.
Cooking liquid (in the method)
Moistens the chopped meat so it stays juicy and holds together when pressed.

The step that matters

Pour enough of the cooking liquid over the meat to moisten it thoroughly. Chopped cooked meat dries out quickly and can crumble. Enough liquid coats the pieces, keeping the potted chicken moist and helping it set firm under pressure.
