Perigord Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Line a ½ quart bread tin with buttered paper.

  2. Add a layer of paste, then cover the sides and bottom with forcemeat.

  3. Sprinkle chopped mushrooms over the forcemeat.

  4. Fill the inside with strips of veal, bacon, cold chicken or turkey, truffles, nutmeg, pepper, and salt.

  5. Cover the meat with forcemeat and then a paste crust.

  6. Brush with egg wash and bake for 2 hours at 350°F (175°C).

  7. Once baked, fill the pie with gravy mixed with dissolved gelatine.

  8. Let the pie cool, then cut into nice square pieces.
