Why it works: Beans and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 4,733 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
To Bake Pork and Beans
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Parboil the piece of pork and carefully remove the rind, cutting it into small squares.
Skim the beans from the water and place them in a deep dish or iron basin.
Add the red pepper and enough water to nearly cover the beans.
Make a space in the center for the pork and place it there.
Bake in the oven at 350°F (175°C) for 1.5 to 2 hours, adding boiling water if the beans start to dry out.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
