Apple Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the sugar and butter.

  3. Add the egg yolks, orange or lemon juice, and zest; mix well.

  4. Stir in the stewed apples, wine, and spices.

Finish and bake

  1. In a separate bowl, beat the egg whites until stiff peaks form.

  2. Gently fold the egg whites into the apple mixture.

  3. Pour the mixture into a prepared pie crust.

  4. Bake for 30-40 minutes or until set and golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks enrich the batter, while whipped whites lighten it and help it set when baked.
Butter
Creams with sugar to give the pudding a rich, tender texture.
Sugar
Sweetens the filling and helps create a creamed base with the butter.
Apples
Provide the main flavor and moisture of the pudding.

The step that matters

Folding in the egg whites. Whipped whites hold air that gives lift and a light texture. Folding gently keeps that air in; stirring hard deflates the foam and leaves the pudding dense.

Swap the orange

How well each one fits the dish's main ingredients (apple, sugar, butter, egg, wine):

  1. Pearfits better
  2. Vanillafits better
  3. Grapefits better
  4. Orangethe original

Fit is the average pairing score against apple, sugar, butter, egg, wine. Candidates are from the same food group and used in at least 100 recipes.
