What each ingredient does

Strawberries
Provide the fruit, flavour and bulk that the preserve is built around.
Sugar
Sweetens the fruit and, at this high ratio, helps preserve it by drawing out moisture and limiting spoilage.

The step that matters

Boiling slowly and skimming scum. Sugar must dissolve fully and the mixture must simmer gently so the berries hold their shape and the syrup thickens without scorching. Skimming removes foam and impurities that would otherwise cloud the preserve and affect its keeping quality.
