To Clean Currants

Ingredients

Directions

  1. Make small holes in a large tin pan, coarser than a wire sieve but small enough to keep the currants in.

  2. Rub the currants with fine Indian meal until the stems are removed.

  3. Sift out as much of the meal as possible and pick the currants clean.

  4. Wash the currants by pouring water over them in the pan.

  5. Set the pan in the sun or near the fire to dry.
