Chicken Soup

Why it works: Chicken and pork match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 5,417 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Ingredients

Directions

Prepare the stuffing

  1. Soak the dry bread in cold water for a few minutes until it can be chopped easily, but do not let it get too wet.

  2. Chop the soaked bread with the pork or butter, cayenne pepper, salt, and mace if using.

Stuff and boil

  1. Wash and dry the chicken inside and out.

  2. Stuff the chicken with the prepared stuffing and sew it up firmly.

  3. Truss the chicken nicely and place it in a pot of boiling water.

  4. Boil the chicken for 2.5 to 3 hours, adding a piece of pork to the pot for flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the body of the soup, releasing flavor and gelatin into the water as it cooks.
Dry bread
Soaked and chopped, it binds the stuffing and absorbs moisture and seasonings.
Pork or butter
Adds fat that carries flavor and gives the stuffing a richer, softer texture.

The step that matters

Soak the bread only briefly. Bread that becomes too wet turns soggy and pasty, so it cannot be chopped cleanly or hold its shape in the stuffing. Soaking just until it is pliable keeps the texture even.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (chicken, bread, pork, pepper):

  1. Garlicfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against chicken, bread, pork, pepper. Candidates are from the same food group and used in at least 100 recipes.
