Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meaty flavor and richness to the broth as it simmers.
Pork
Adds fat and savory depth to the soup, with rind contributing body.
Cabbage
Becomes tender as it boils, adding mild sweetness and bulk to the soup.
Potatoes
Soften as they cook, thickening the broth slightly and adding starch.

The step that matters

Skimming the scum from the beef. Scum is coagulated protein and impurities that rise during simmering. Removing it as it forms keeps the broth clear and prevents a bitter, muddy flavor.
